Clapshot1
David M. and Susie M. Arnold
Instead of Chappit Tatties (mashed potatoes) and Bashed Neeps
(mashed turnips or rutabagas), we serve Clapshot at our at-home
Burns suppers. Clapshot is a dish from Orkney that is a mixture
of mashed turnips and potatoes.
Ingredients
1 1/2 lb. potatoes
1 1/2 lb. turnips or rutabagas
Heavy cream
|
Chopped Chives (to taste)
White Pepper (to taste)
|
Procedure
Cut up the potatoes and turnips and boil until tender (we like to
give the turnips a head start since they take longer to cook). Drain
and then return to the hot pan to dry out a little. Mash.
Add a dash (approx. 1T) of heavy cream and mix. Adjust amount
of cream to obtain your desired consistency. Add chopped chives
and a sprinkling of ground white pepper.
Serves 6.
Notes
- A dish very similar to this was developed by the Shakers during the
19th century. They called it Alabaster.
